Good and straight forward answer. I'm replacing all my bearings on my hardtail. Headset, BB, Hubs etc. Jockey also getting a good overhaul and new gear cables. I have a tub of Castrol WB grease and Chevron grease just sitting in the garage. Just not sure if i can use these grease and why not.

You can use WB grease on your bike, ESI is a medium to severe duty extended service interval product, nothing on a bike can stress it beyond the intended use specification. If it is an old tub/container of grease go through the extra trouble of mixing it thoroughly. Grease is a semi-solid lubricant, over time the oil and the soap (emulsifier) does separate. Giving it a proper mix will ensure you get a balanced product which has not separated yet. I am being pedantic.....
